Sweet Potato Biscuits on the BBQ by Rick Browne

WHAT YOU NEED:

• 2 tablespoons butter

• 1 1/2 cups all purpose flour

• 1 1/2 cups cake flour

• 1 tablespoon baking powder

• 1 teaspoon salt

• 1 1/2 cups mashed, baked sweet potatoes

• 1/4 cup brown sugar

• 2 large eggs, beaten

STEPS:

1. Preheat barbecue to 425° F for indirect heating (coals on one side only).

2. Melt the butter in a small saucepan, and set aside to cool.

3. In a large bowl, sift together both flours, baking powder and salt.

4. In a separate bowl, stir the butter into the mashed sweet potatoes, blending well. Add the sugar and beaten eggs and stir the mixture well to blend. Add in the dry ingredients one cup at a time and stir to blend well. Turn the dough onto a floured board and knead briefly.

5. Roll the dough to 1/2 inch thickness, then use a 2 inch round cutter to cut out biscuits, placing them on a lightly greased baking sheet. Then gather the scraps and reform into 1/2 inch thick roll, and continue to cut out biscuits. There should be 12 - 14 biscuits.

6. Bake in the preheated bbq at 425° F until biscuits are golden.

Serves 4 to 6
