My mom makes delicious scalloped potatoes with a mix of cream-based soup, ham, etc. I grew up loving the recipe but now that I have to eat gluten-free and two kids have to eat dairy-free, I find myself trying to reinvent her recipes with these needs in mind. This one came pretty close to the original but not quite as creamy.
WHAT YOU NEED:

4-5 Large Potatoes

¼ Pound Ham

1 Can (12 oz) of Chicken or Veggie Stock

¼ Cup Lactose-Free Milk
-
3 Tablespoons Dairy-Free Butter (we use the Smart Balance Light spread with Omega 3)

½ Teaspoon of Salt; sprinkle of pepper

Lactose Free Cheese (we use Precious Lactose-Free String Cheese)
STEPS:

Peel and slice potatoes.

Mix milk, stock and salt/pepper in a bowl.

Layer in baking dish as follows: One layer of potatoes, some liquid mix on the top, sprinkle some ham and cheese, repeat until potatoes are the top layer, sprinkle top layer with additional liquid to keep from drying out.

Bake at 350 degrees for about 45-50 minutes.
(Recipe can be made with regular milk and cheese if tolerated or be sprinkled with parmesan cheese on top)
Thanks for the recipe. I just got a 10 pound bag of potatoes (Costco is evil!) and have been hunting for some gluten/dairy free things to do with them. ;)
